I assume this is all Hell Difficulty?

Stats seem a little lower than original. Main difference would be ...

-Blocking, Resist Dam and Magic?

So they would be a lot tougher in the long run, but their stats are a bit lower?

Yes, you are right about the difference, and blocking, damage/magic resist bonus apply to all game difficulties. Skeleton statistics are a bit lower in the beginning but a lot tougher in the long run.
